Gluing enables to attain an excellent adhesion between the meat (chicken or fish) and the batter or breadcrumbs, for medallions, “milanesas” and sticks that are manufactured at butcheries, fish shops and farms. Our batter (gluing) is available ready to use, with all the seasonings and the dilution recommended is 1:10 (example: 1 kg of batter in 10 liters of water). Particularly our batter line with gluing for “milanesas” enables to personalize taste, color and pick up level. If you want to manufacture “milanesas” without any “bald area”, our gluing is a perfect solution, always preserving a stable taste and a pick up always above 115% in two passes.
Within this line, we handle the conventional batter (with gluing) (which yields 10 liters per kg but it is already seasoned) and the egg product (obtained from chicken dehydrated eggs and its yield is higher: 30 liters per kg, but without incorporating spices).
Applications: Our batter with gluing is destined to the breading of a wide variety of finished products -essentially meat and chicken “milanesas”, but also fish and vegetable sticks, nuggets, medallions-. Another advantage is that the final cooking stage may be solved indistinctly using a pan, a fryer, microwaves or an oven.
