Due to their grain size (granulometry), white color and texture, our batters may be applied to all sorts of loads and fillers.

For example, they may be applied to gnocchi, ham and cheese, vegetables, spinach, meat or chicken ravioli, to cheese and meat cappellettis, to meat, chicken, cheese or ham “sorrentinos”; capresse or ricotta panzerottis and in many other types of homemade or industrially made pasta. Besides, we have already mentioned that they can be added to pies and of course, also to tarts.

Our batters arise from the suitable combination of water, starches and flour, among other raw materials. After cooked, they adopt the shape of a cracker or biscuit and they are finely grinded to adopt their final characteristic presentation. However, these products are not only necessarily used as a batter and to provide crispy and tasty coatings, but they can also be used to fill pasta or pies, for example. In these cases, batters facilitate adherence and they also stabilize the filling and enable to form drier products.

Soft batters, particularly, are highly requested by pasta factories, given their neutral taste and their remarkable water absorption capacity (that exceeds 250% in relation to its weight), specially that type of pasta filled with different vegetables and meat, for example.
